A day for sharing things – Vegetarian Recipes & Great Blogs!

First off can I say how great it is to be back to blogging – back into routine and eating well again.

We all know that the Christmas Break causes us all to be a bit more “Relaxed”… or in my case “gluttonous” but it really is easy to get back into it, start today – not tomorrow, you will be amazed at 2 days in just how good you feel already.

This morning I started the day with a Pump class (I hadn’t been in two weeks, so my weights were a lot lower than normal and I struggled through, I lose my muscle really quickly – not wonder I have felt so blobby lately).  I went home and had rolled oats with blueberries and greek yoghurt (The blueberries are great for your skin – so fingers crossed it can get rid of my choc zits!).  Vitamins, a long black and a Berocca and I’m motivated (Im even doing work today – in amongst blogging of course).

So, I stumbled across this post via my Facebook today – I read Katie’s article and was amazed, I then looked at her photos at the bottom of the post, she is beautiful, so so beautiful.  What she says about body image is so true, and I thought you might all like to read it:

Now…. here is the first vegetarian Recipe that I am so obsessed with (Im even making it again tonight)

VEGETARIAN BURRITOS

What you will need:photo

1 x pack of Mission Wholemeal wraps

1 x tin of Mexican Chilli Beans

1 x tin of Baked Beans – salt reduced

1 x cucumber

1 x tomato

Some Rocket Lettuce

Some Greek Yoghurt

 

 

How to make:

Heat a pan on a low heat, pour in the two tins of beans and stir (add spices if you like). When the beans are warm line a wrap with some rocket, pop the beans on, layer with the cucumber and tomatoes, add a small amount of greek yoghurt. (If you feel like being a touch naughty – or as I like to call it, just getting some calcium – add cheese too). Pepper to flavour, and VOILA.

It literally will take you 10 minutes tops, and they taste BRILLIANT.

        I made a chickpea curry (recipe coming today) and told my Mum to make it she said the same about Dad (hes strictly a meat and 3 veg type guy) and he scoffed it all up and told her it was amazing. People are sometimes scared of trying new things! haha.
        My boyf was vego for 9 years (no longer) and I wouldnt of even dreamt of eating vegeterian meals before he cooked them for me, now I find them so much lighter and stress free – I detest cooking meat! yuk.
